Righteous Rib Rub Candied Chicken Thighs | Sweet, Spicy, Sticky Perfection

These candied chicken thighs are where sweet, spicy, and smoky come together and slap you with flavor. The brown sugar caramelizes into a crisp edge, the Righteous Rib Rub brings the heat, and that glaze of blueberry BBQ sauce? It ties it all together in the most unexpected way.

This isn’t your weeknight chicken. This is the kind of meal that makes folks pause mid-bite and look around like, “Yo, who made this?

Cook Time: 40–45 minutes
Servings: 4–6


Ingredients:

  • 6 bone-in, skin-on chicken thighs

  • 2 tbsp Uncle Clarence’s Righteous Rib Rub (with a Kick)

  • 2 tbsp light brown sugar

  • 1 tbsp olive oil

  • ½ cup Uncle Clarence’s Blueberry BBQ Sauce

  • ¼ cup apple juice (for pan moisture)

  • Optional: fresh parsley or chives for garnish


Instructions:

  1. Preheat oven to 400°F (205°C). Line a baking dish or sheet pan with foil and lightly oil it.

  2. Pat chicken dry with paper towels. In a small bowl, mix Righteous Rib Rub with brown sugar.

  3. Rub the mixture generously over each chicken thigh, coating evenly on all sides.

  4. Place chicken skin-side up in the prepared dish. Drizzle olive oil over the top and pour apple juice into the base of the pan (this keeps things juicy).

  5. Roast uncovered for 30–35 minutes, basting once with pan juices halfway through.

  6. In the last 10 minutes, brush each thigh with Uncle Clarence’s Blueberry BBQ Sauce. Return to oven and roast until the sauce is sticky and caramelized, and the internal temperature reaches 175°F.

  7. Rest for 5–10 minutes before serving. Spoon any extra pan glaze over the top and garnish if desired.
