A tender, oven-baked brisket created by Taelor Rankin of Hungry Mockingbird — and tested, approved, and honored by Uncle Clarence BBQ.

I’ve always cooked brisket outside.

Smoke. Wood. Fire. Patience.

That’s how I learned it. That’s how I respect it.

So during our first year building Uncle Clarence BBQ, when I asked Taelor Rankin of Hungry Mockingbird to create something for the brand, I didn’t give her rules. I didn’t give her boundaries. I told her one thing:

“Surprise me.”

She came back with an oven-baked brisket.

I won’t lie — I was skeptical. Brisket, to me, belonged outside. But if you invite creativity in, you respect it enough to test it. So I made it myself.

And I was impressed.

The Oven-Baked Brisket

What surprised me most was the tenderness — without smoke.

Deeply seasoned. Moist. Rich. Built for real kitchens.

No smoker required.

Ingredients

  • 3–4 lb beef brisket
  • Olive oil
  • Uncle Clarence Righteous Rib Rub
  • Beef broth
  • Garlic cloves
  • Onion slices

Preparation

  1. Preheat oven to 300°F.
  2. Pat brisket dry and rub lightly with olive oil.
  3. Season generously on all sides with Righteous Rib Rub.
  4. Let rest 30–45 minutes before cooking.

Cooking Method

  1. Place brisket in roasting pan.
  2. Add beef broth around (not over) the meat.
  3. Add garlic cloves and onion slices around brisket.
  4. Cover tightly with foil.
  5. Bake for approximately 3–4 hours, or until internal temperature reaches 200–205°F.
  6. Remove and rest covered for 30 minutes before slicing.

Slice It Right

Always slice against the grain. That’s what determines tenderness more than anything else.

If you slice with the grain, it will feel tough no matter how perfectly you cooked it.

How long does it take to cook brisket in the oven at 300°F?

Cook time depends on thickness and your oven, but a 3–4 lb brisket often lands around 3–4 hours covered. Always verify with internal temperature and tenderness.
