Ingredients:
For the Shrimp:
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
1 tablespoon BBQ seasoning
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1/2 teaspoon cayenne pepper (adjust to taste)
Salt and black pepper to taste
For the Pasta:
12 oz penne pasta
2 tablespoons olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 medium red onion, sliced
3 cloves garlic, minced
1 cup heavy cream
1 cup coconut milk
1 cup grated Parmesan cheese
1 tablespoon calypso heat jerk seasoning
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Lime wedges (for serving, optional)
Instructions:
Prepare the Shrimp:
In a large bowl, combine the shrimp, olive oil, BBQ seasoning, smoked paprika, garlic powder, onion powder, dried thyme, cayenne pepper, salt, and black pepper. Mix well to coat the shrimp evenly.
Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side until they turn pink and are fully cooked. Remove from the skillet and set aside.
