Ingredients

1 whole chicken (4–5 lbs)

2 tablespoons olive oil

2 tablespoons honey

1 tablespoon pineapple juice

½ tablespoon water

1 tablespoon paprika
-
2 teaspoons garlic powder

2 teaspoons onion powder
-
1 teaspoon dried thyme
-
1 teaspoon dried oregano
-
1 teaspoon salt
-
1 teaspoon black pepper
-
½ teaspoon cayenne pepper (optional)

1 lemon, halved (or sub with pineapple for a tropical twist)

Fresh rosemary and thyme (optional for cavity)

1 cup chicken broth or water (for roasting pan)

Optional Glaze Finish: Add 1 extra tbsp honey + 1 tbsp pineapple juice during final 10 minutes of roasting
Instructions

Preheat & Prep
Preheat oven to 375°F (190°C).
Remove giblets, rinse the chicken, and pat dry. -
Mix the Marinade
In a bowl, combine olive oil, honey, pineapple juice, water, paprika, garlic powder, onion powder, thyme, oregano, salt, pepper, and cayenne. Stir until it forms a thick glaze. -
Season the Chicken
Rub the marinade thoroughly over the chicken, including under the skin if possible for deeper flavor. -
Stuff & Rest (Optional)
Place lemon halves or pineapple chunks inside the cavity along with rosemary and thyme. -
Roast or Rotisserie
Place chicken on a rack in a roasting pan with broth at the bottom. Roast for 1.5 to 2 hours or until internal temperature hits 165°F in the thickest part.
(If using rotisserie, secure and spin on medium-high heat, basting occasionally.) -
Baste & Finish
Baste with pan juices every 30 minutes. In the final 10 minutes, brush on additional honey + pineapple glaze for a glossy finish. -
Rest & Carve
Let the chicken rest for 15 minutes before carving to retain juices.
