Ingredients

  • 1 whole chicken (4–5 lbs)

  • 2 tablespoons olive oil

  • 2 tablespoons honey

  • 1 tablespoon pineapple juice

  • ½ tablespoon water

  • 1 tablespoon paprika

  • 2 teaspoons garlic powder

  • 2 teaspoons onion powder

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • ½ teaspoon cayenne pepper (optional)

  • 1 lemon, halved (or sub with pineapple for a tropical twist)

  • Fresh rosemary and thyme (optional for cavity)

  • 1 cup chicken broth or water (for roasting pan)

  • Optional Glaze Finish: Add 1 extra tbsp honey + 1 tbsp pineapple juice during final 10 minutes of roasting


Instructions

  1. Preheat & Prep
    Preheat oven to 375°F (190°C).
    Remove giblets, rinse the chicken, and pat dry.

  2. Mix the Marinade
    In a bowl, combine olive oil, honey, pineapple juice, water, paprika, garlic powder, onion powder, thyme, oregano, salt, pepper, and cayenne. Stir until it forms a thick glaze.

  3. Season the Chicken
    Rub the marinade thoroughly over the chicken, including under the skin if possible for deeper flavor.

  4. Stuff & Rest (Optional)
    Place lemon halves or pineapple chunks inside the cavity along with rosemary and thyme.

  5. Roast or Rotisserie
    Place chicken on a rack in a roasting pan with broth at the bottom. Roast for 1.5 to 2 hours or until internal temperature hits 165°F in the thickest part.
    (If using rotisserie, secure and spin on medium-high heat, basting occasionally.)

  6. Baste & Finish
    Baste with pan juices every 30 minutes. In the final 10 minutes, brush on additional honey + pineapple glaze for a glossy finish.

  7. Rest & Carve
    Let the chicken rest for 15 minutes before carving to retain juices.
