Uncle Clarence Righteous Ribs Recipe

By the time I reached my 20s, I would often challenge him to see who could craft the best BBQ spare ribs. He would chuckle and say, "You're getting close, but not quite there yet," and he was always right. Now that I’ve mastered it, I’m thrilled to share this cherished recipe that my dad passed down to me, hoping it brings as many wonderful memories to your family as it did to mine.
Ingredients:
- 2 slabs St. Louis Style pork ribs
- 1 cup ginger ale
- 1 cup Coca-Cola
- 1 cup apple juice
- 1/2 cup low sodium soy sauce
- 4 tbsp Uncle Clarence Righteous Ribs seasoning
- 2 tbsp olive oil
- Lemon juice (optional)
- Baking soda (optional)
- Uncle Clarence BBQ Sauce (optional)
Instructions:

Preparation:
- Clean the ribs using lemon juice and baking soda, rubbing both sides well. Rinse thoroughly with cold water and pat dry.
- Trim excess fat and remove the silver skin from the ribs, then let them rest.

Brining:
- In a deep pan, combine Coca-Cola, ginger ale, apple juice, half of the soy sauce, and 1 tablespoon of Uncle Clarence Righteous Rib rub.
- Submerge the rib slabs in the brine mixture and allow them to marinate for 3-4 hours, or ideally overnight in the refrigerator.

Seasoning:
- Remove the ribs from the brine and pat them dry.
- Rub both sides of the ribs with the remaining soy sauce and olive oil.
- Generously sprinkle Uncle Clarence Righteous Rib seasoning on both sides and pat it into the meat.

Smoking:
- Allow the ribs to come to room temperature before placing them in the smoker.
- Smoke the ribs for 1.5 hours using a mixture of hickory, apple wood, and mesquite.
- After 1.5 hours, pour apple juice on top of the ribs and wrap them tightly in foil.
- Continue smoking for another 1.5 hours.

Finishing:
- Unwrap the ribs and place them on the grill.
- Coat with Uncle Clarence BBQ Sauce as a glaze for the last 5 minutes of cooking.
Total Cooking Time:
- 3 hours of smoke time
